Quinoa Salad With Citrus Cilantro Dressing Recipe

Quinoa is quick, easy to prepare and delicious! Not to mention the grain is packed with amazing benefits every busy mami needs. Quinoa (keen’-wa) supplies what is a called a complete protein, which means it provides your body all nine essential amino acids. High in lysine, which aids is tissue growth and repair, this little powerhouse grain is also a good source of magnesium and iron.

Gluten free, wheat free, and easy to digest…quinoa has  quickly become to go-to lunch option for many.  This salad can be eaten warm, cold, or mixed with the fruit or vegetable of your choice.

  • 1/4 
    Cup cilantro
  • 1/4 
    Cup freshly squeezed fresh citrus juice
  • 1/4 
    Cup olive oil, plus 2 TBSP for vegetables
  • 1/4 
    Tsp. salt
  • 1/4 
    Tsp. pepper
  • Cup quinoa
  • Cups water, vegetable broth or chicken broth
  • 1/2 
    Cup diced carrots
  • 1/2 
    Cup diced celery
  • 1/2 
    onion, diced
  • garlic clove, minced
  • Cup chickpeas
  • 1/2 
    Cup chopped tomatoes


  1. Place quinoa in a large saucepan with 2 cups liquid of your choice (chicken broth, vegetable broth or beef broth) and bring to a boil.

  2. Reduce heat, cover and simmer for 15 minutes.

  3. The quinoa will be soft and will have absorbed the liquid. Set aside, allow to cool.

  4. For dressing: In blender add cilantro, citrus juice, salt and pepper. Blend until smooth. Season to Taste. Set aside.

  5. In a skillet over medium high heat add the 2 TBSP of olive oil. Sauté carrots, celery, onion and garlic until tender, about 4 minutes.

  6. Add quinoa to the cooked vegetables and chickpeas. Add the chopped tomatoes and mix to combine

  7. Add dressing or serve tableside.

  8. Can be stored in fridge for 1 week.
