We’re Just Nuts About Almond Fish

  • 1 1/2 
    Cups blanched whole almonds (about 7 oz.)
  • cod or halibut fillets (about 2 lbs.)
  • Tbsp. I Can't Believe It's Not Butter!® Spread
  • Tbsp. corn oil [or vegetable oil]
  • Tbsp. onion, finely chopped
  • cloves garlic, finely chopped
  • Knorr® Shrimp flavor Bouillon Cubes, crumbled
  • Cups water
  • 3/4 
    Cup Hellmann's® or Best Foods® Real Mayonnaise
  • Tbsp. lemon juice
  • Tbsp. sliced roasted red peppers
  • Tbsp. finely chopped fresh parsley leaves (optional)


  1. In a food processor or blender, process almonds until finely ground and set aside.

  2. Season the fillets, if desired, with salt and ground black pepper. In a 12­ inch nonstick skillet, melt the Spread with the oil over medium­-high heat and cook the fillets, turning once, about 4 minutes or until almost cooked. Remove the fillets and set aside.

  3. In the same skillet, cook the onion and garlic over medium­-high heat, stirring occasionally, about 2 minutes.

  4. Stir in the Knorr® Shrimp flavor Bouillon Cubes blended with water, mayonnaise, lemon juice and the almonds. Reduce heat to medium and simmer stirring occasionally, about 4 minutes.

  5. Return the fillets to the skillet and simmer 5 minutes or until fish flakes easily with a fork.

  6. Garnish with roasted red peppers and parsley. Serve, if desired, with hot cooked rice.
