Easy-to-make Cajeta Pumpkin Pie

What can be better than a slice of warm, spiced pumpkin pie on a fall or winter day? Well, a cajeta pumpkin pie! This is the classic pumpkin pie recipe taken to the next level by sweetening it with delicious cajeta (also known as dulce de leche or arequipe). The end result is a dense, super-rich pumpkin custard with the flavors of our childhood.   • 1 ¾ cups 
    all purpose flour
  • 1 tbsp. 
  • ¼ tsp. 
  • 12 tbsps. 
  • ¼ cup 
  • eggs
  • 1 cup 
  • 1 cup 
    pumpkin puree
  • ¼ tsp. 
  • 1 tsp. 
  • 1 pinch 
    nutmeg, freshly ground
  • ½ cup 


  1. For the crust, place the flour, sugar and salt in the bowl of a food processor and pulse twice.

  2. Add butter and pulse a few times until coarse crumbs are formed.

  3. Add the water and pulse a few times until a compact dough is formed.

  4. Place the dough on plastic film. Form a disc, cover and refrigerate for 30 minutes.

  5. Preheat the oven to 425˚F.

  6. On a surface covered with plastic film, roll out the dough with a roller until it’s ¼ inch thick.

  7. Transfer the dough to a pie dish and press slightly to the bottom and sides of the dish.

  8. Trim the edges and decorate with your fingers or with a fork.

  9. Line the pie shell with parchment paper and fill with baking pie weights (you can also use chickpeas if you don't have weights.)

  10. Cover the edges of the crust with aluminum foil to prevent burning and bake for 20 minutes.

  11. Let the pie shell to cool down completely and remove the baking pie weights.

  12. In a bowl, slightly beat the eggs and add the rest of the ingredients: cajeta, pumpkin puree, cinnamon, allspice, and cream. Beat until a creamy mixture is formed.

  13. Reduce the oven temperature to 350˚F and bake for 35 minutes or until a toothpick inserted into the center comes out clean.
