Cinnamon Apple Pecan Pancakes

The fall and winter seasons call for some delicious apple recipes, and what better way to enjoy them than topped on some good old fashioned pancakes. Pancakes are well loved in my household. We all like them with certain toppings, but I have to say this version has become my favorite. It’s the perfect breakfast idea for a Sunday morning with the family. Enjoy these delicious pancakes with a cup of milk or a nice hot cup of coffee.

Ingredients

  • For the pancake mix: 
  • eggs
  • 2 tbsps 
    vegetable oil
  • 1 1/4 cups 
    milk
  • 1 1/2 cups 
    flour
  • 2 tbsps 
    sugar
  • 3 tsps 
    baking powder
  • 1 tsp 
    salt
  • For the apple topping: 
  • gala apples, diced
  • 1 1/2 tbsps 
    butter
  • 1 1/2 tsps 
    sugar
  • 2 tsps 
    brown sugar
  • Cinnamon to taste
  • 1/2 cup 
    of pecans

Instructions

  1. In a mixing bowl whisk the eggs, vegetable oil and milk.

  2. In a separate bowl, sift the flour, sugar, baking powder and salt.

  3. Slowly add the dry mixture to the wet mixture and mix well.

  4. Add butter to your griddle or non-stick pan.

  5. Heat to medium-high heat.

  6. Pour 1/4 cup batter onto the griddle for each pancake. Cook for about 1-2 minutes until it begins to bubble or the edges are golden brown.

  7. While the pancakes are on the griddle heat up a pan to medium heat.

  8. Add the butter, sugar, brown sugar, and cinnamon. Stir it for about 30 seconds.

  9. Add the diced apples to the sauce and cook for about 5-7 minutes until soft.

  10. Serve your pancakes, add the apple glaze on top, sprinkle some pecans, and drizzle them with syrup and enjoy!
